Smothered Pork Chops
- 6 center cut pork chops (1-inch thick)
- 1 tsp. salt
- 1/4 tsp. white pepper
- 1/4 c. pancake mix
- 2 Tbsp. olive oil or vegetable shortening
- 3 medium onions, peeled and sliced
- 1 can cream of mushroom soup
- 1/2 c. water
- leftover rice (optional)
- Sprinkle pork chops with salt and pepper.
- Coat with pancake mix (flour will work if you don't have mix in the cabinet).
- Heat oil in large skillet.
- Brown chops on both sides.
- Remove chops and place in a shallow roasting pan.
- Saute onions in remaining oil.
- Mix condensed soup with water and pour in skillet.
- When hot, pour over chops.
- Spoon rice between chops and cover with soup mixture.
- Cover pan tightly with aluminum foil and bake in a moderate oven at 350u0b0 for 1 hour and 20 minutes.
