Manicotti With Cheese Filling
- 1 lb. box manicotti shells
- 2 lb. Ricotta cheese
- 1/2 lb. Mozzarella cheese
- 1/2 c. grated Parmesan cheese
- 1 (2 lb.) jar spaghetti sauce
- 2 eggs
- 1 tsp. salt
- 1 tsp. parsley flakes
- 1/8 tsp. pepper
- Cook manicotti shells in 4 quarts boiling salted water for 15 minutes, stirring occasionally.
- Drain.
- Mix remaining ingredients (less the manicotti shells and spaghetti sauce) in a large mixing bowl.
- Stuff each shell with 1/3 to 1/2 cup filling.
- Pour enough spaghetti sauce to cover bottom of 3-quart baking dish.
- Lay shells side by side.
- Pour remaining sauce over the shells. Sprinkle the top with Parmesan cheese, if desired and bake at 350u0b0 for 40 minutes.
- Serve hot.
