Pumpkin Chocolate Chip Cookies
- 4 c. flour
- 2 c. Quick oats
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 c. butter or margarine, softened
- 2 c. packed brown sugar
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 (16 oz.) can pumpkin
- 1 c. chocolate chips
- raisins or nuts (optional)
- Preheat oven to 350u0b0.
- Combine first 5 ingredients; set aside. Cream butter and sugars; add egg and vanilla.
- Mix well.
- Alternate additions of dry ingredients and pumpkin, mixing well.
- Stir in chocolate chips.
- Drop by teaspoon onto lightly greased cookie sheet.
- Bake 15 to 20 minutes.
- Makes 3 to 4 dozen cookies.
- Eat and enjoy.
- A perfect treat for the Halloween season.
