Sweet-Sour Beets
- 4 or 5 medium beets
- 1/4 c. brown sugar
- 1/4 c. frozen orange juice
- 2 Tbsp. lemon juice
- 1 Tbsp. cornstarch
- 1/3 c. chopped pecans
- 2 Tbsp. butter
- salt
- black pepper
- parsley
- Wash
- and
- trim
- beets;
- put
- in
- saucepan
- with 1-inch boiling water; add salt to taste.
- Bring to a boil;
- cover and simmer fort5 to 45 minutes or until beets are tender.
- Drain and reserve
- 1/2
- cupteet liquid; peel and slice beets; set aside. Intaucepan, mix reserved liquid, brown sugar, orange juice, lemon
- juice
- and cornstarch; bring to a boil, cooking until thickened.tdd
- beets and heat, stirring until glazed; keep warm.
- In
- a skillet, saute pecans in butter; add beets, salt, pepper and parsley.
