Chocolate Covered Cherries

  1. Drain about 50 cherries.
  2. Pat dry on paper towels; set aside. Combine butter, syrup and salt, stirring well.
  3. Stir in powdered sugar and knead in bowl until smooth.
  4. Shape 1/2 teaspoon mixture around each cherry.
  5. Place on waxed paper lined baking sheet. Chill about 2 hours or until firm.
  6. Combine chocolate and shortening in top of a double boiler.
  7. Bring to a boil.
  8. Reduce heat to low.
  9. Cook until chocolate melts.
  10. Dip each cherry by the stem into the chocolate.
  11. Place on a waxed paper lined baking sheet.
  12. Chill until firm.
  13. Store in airtight container in the refrigerator.
  14. Yields about 50 cherries.
