Turkey Manicotti
- 8 manicotti shells
- 1 lb. ground raw turkey
- 1 large can meatless spaghetti sauce
- 1 beaten egg
- 1 c. Ricotta cheese
- 1 c. shredded Mozzarella cheese
- 1/2 c. snipped parsley
- 1/4 c. grated Parmesan cheese
- Cook manicotti in boiling water about 18 minutes or until tender but still firm.
- Drain well.
- In a large skillet cook turkey until no longer pink.
- Drain.
- Stir in sauce; heat through.
- Mix together egg, Ricotta, Mozzarella, parsley and Parmesan.
- Stuff cheese mixture into shells.
- Spoon 1/3 of the sauce mixture into a 12 x 8 x 2-inch baking dish.
- Place shells atop.
- Top with remaining sauce mix; covering shells.
- Bake, covered, in a 350u0b0 oven for 25 to 30 minutes or until hot.
- Serves 4.
