Greek Salad
- 10 lb. red potatoes
- 2 Tbsp. chopped garlic
- 1 large chopped onion
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 3 to 4 Tbsp. vinegar
- 2 large heads lettuce
- 2 green peppers, cut in rings
- 1 lb. boiled shrimp, cleaned
- 4 tomatoes, cut in wedges
- 2 cucumbers, quartered and sliced
- 1 bunch green onions
- 1 large can black olives
- 1 jar green olives
- 1 jar Greek peppers
- 1 can beets
- 2 lb. Feta cheese, sliced
- 1 to 2 cans flat anchovies
- Peel and cube potatoes.
- Add garlic and cook until done, but still firm.
- Drain.
- Add chopped onion.
- Cool to warm.
- Add mayonnaise, sour cream, vinegar, salt and pepper to taste and mix well.
