Grilled Orange Roughy With Tomato Basil Sauce
- 3 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 medium onion, minced fine
- 1/4 tsp. salt
- 1/4 tsp. fresh cracked pepper
- 4 Tbsp. chopped fresh basil or 2 Tbsp. dried basil
- 3 c. freshly chopped tomato
- the juice of 1/2 lemon
- 3 (6 to 8 oz.) orange roughy fillets
- 2 Tbsp. olive oil
- juice of 1/2 lemon
- salt
- pepper
- 2 Tbsp. dried basil
- 2 Tbsp. dried oregano
- For Grilling the Fish (for 4 people):
- Brush fish with oil and lemon.
- Sprinkle salt, pepper, dried basil and oregano over fish. Place fish on lightly oiled rack.
- Grill over coals, 4 to 5 minutes per side, until done.
- Remove fish.
- Garnish with Tomato Basil Sauce and serve.
