Pan-Seared Steak And Onions

  1. In a large skillet, melt 2 tbsp butter with 1 tbsp of olive oil over medium heat.
  2. Add the onions, and cook, stirring occasionally until golden (about 15 minutes).
  3. Transfer the onions to a bowl and set aside.
  4. Season both sides of steak with salt and pepper.
  5. Add remaining 1 tbsp olive oil to the skillet and fry steak over medium heat turning once until brown - about 6 minutes per side (for medium).
  6. Transfer steak to serving platter and keep warm.
  7. Add bourbon to the skillet and over medium heat - scrap up bits that cling to the pan. allow the liquor to simmer and reduce by half (about 1 minute).
  8. Add the onions and remaining 2 tbsp butter and stir until butter is melted. Reduce heat and cook till onions are tender (about 2 minutes). Season to taste with any salt and pepper.
  9. To serve, cute the steak in 1/4 in thick slices and top with onions.
