Chicken Cacciatore

  1. Rinse chicken and pat dry.
  2. Season with salt and pepper.
  3. In a large frying pan, heat olive oil.
  4. Add chicken and cook turning after 5 minutes or until lightly browned on both sides.
  5. Add onion to pan and cook for a couple of minutes or until softened.
  6. Add garlic and cook for about 30 seconds.
  7. Add wine, tomatoes and oregano.
  8. Bring to a boil and reduce heat to medium-low.
  9. Cover and simmer 30 minutes.
  10. Season with additional salt and pepper; sprinkle with parsley and serve with your favorite pasta.
