Shrimp Atlantica
- 1/2 cup finely chopped onion
- 2 cups diced seeded, peeled tomatoes or (28 ounce) cans crushed tomatoes
- 1/4 cup olive oil
- 2 teaspoons sugar
- 2 tablespoons garlic, finely chopped
- 1 teaspoon fresh basil
- 1 teaspoon fresh oregano
- 1 teaspoon fresh marjoram
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1 dash cayenne
- 1 lb linguine
- 8 large pitted olives, sliced
- 20 large shrimp, peeled and deveined
- 1/4 cup grated romano cheese
- 2 tablespoons fresh parsley, chopped
- Brown onion lightly in oil.
- Add garlic, stir for about 30 seconds.
- Add tomatoes.
- Add sugar, olive oil and all seasoning.
- Simmer for about an hour and a half.
- Cook pasta, toss with red sauce and garnish with olives and parsley.
- Sprinkle with cheese or pass it while serving.
