Risi Bisi Or Rice Valencienne
- 3 oz. salad oil
- 1 oz. garlic, minced
- 3 oz. cooked ham, diced fine
- 1 qt. chicken stock
- 1 tsp. white pepper
- 1/4 c. pimentos, diced
- 1 oz. onion, chopped
- 1 lb. rice
- 1 bay leaf
- 1 tsp. salt
- 1/2 c. green peas, cooked
- 1/2 c. mushrooms, cooked and diced
- Saute onion and garlic in oil until lightly browned.
- Stir in rice, ham and bay leaf.
- Saute about 5 minutes, stirring often. Combine rice mixture with stock, salt and pepper; stir well. Bring to a boil.
- Cover tightly.
- Bake at 350u0b0 for 20 to 25 minutes, or until rice is done.
- Remove bay leaf.
- Heat peas, pimentos and mushrooms.
- Add to rice; toss lightly with fork to combine.
- Cover and heat for 3 to 4 minutes longer.
