Risi Bisi Or Rice Valencienne

  1. Saute onion and garlic in oil until lightly browned.
  2. Stir in rice, ham and bay leaf.
  3. Saute about 5 minutes, stirring often. Combine rice mixture with stock, salt and pepper; stir well. Bring to a boil.
  4. Cover tightly.
  5. Bake at 350u0b0 for 20 to 25 minutes, or until rice is done.
  6. Remove bay leaf.
  7. Heat peas, pimentos and mushrooms.
  8. Add to rice; toss lightly with fork to combine.
  9. Cover and heat for 3 to 4 minutes longer.
