Meggie'S Favorite Chicken Cordon Bleu
- 8 chicken breasts, skinned and boned
- 8 tsp. fresh parsley
- 4 oz. part-skim Mozzarella cheese, into 8 thin slices
- 4 oz. boiled ham, cut into 4 thin slices and halved
- 1 Tbsp. low-cal, low-fat mayonnaise (salad dressing)
- 1 Tbsp. warm water
- 1/2 c. whole grain bread crumbs (made in blender)
- 1 can cream of chicken soup and 1/2 can water
- Preheat oven to 325u0b0.
- Pound breast until thin, sprinkle with parsley.
- Top with cheese and ham.
- Roll up tightly.
- Stir together mayo and water in shallow dish.
- Roll each chicken fillet in mayo mixture, then bread crumbs.
- Arrange chicken rolls seam down on baking sheet.
- Bake 25 to 30 minutes until cooked through. Heat soup and water.
- Pour over chicken just before serving. Makes 258 calories with 14 gm. fat, 1/3 bread, 4 lean meat, 1/2 fat food exchange.
