Chicken Pepper Gnocchi
- vegetable cooking spray
- 1 1/2 c. chopped sweet red pepper
- 1/2 c. chopped green pepper
- 1 c. chopped onion
- 3 cloves minced garlic
- 1/4 tsp. ground cumin
- 1/4 tsp. crushed red pepper
- 1/4 tsp. salt
- 1 Tbsp. all-purpose flour
- 1 tsp. chicken flavored bouillon granules
- 1/2 c. water
- 1/2 (16 oz.) pkg. gnocchi pasta (uncooked)
- 4 (4 oz.) skinned, boned chicken breast halves
- 1 (6 oz.) pkg. frozen snow pea pods
- Coat a large, nonstick skillet with cooking spray.
- Place over medium heat until hot.
- Add red peppers and the next 5 ingredients; saute until tender.
- Stir in salt, flour and bouillon granules.
- Gradually add water; bring to boil, stirring constantly.
- Set aside and keep warm.
- Cook pasta according to directions, omitting salt and fat.
- Drain and set aside.
