Sedalia'S Louisiana Gumbo(Fourth Generation Recipe)
- 1 stewing chicken
- 6 medium crabs
- 5 lb. shrimp
- 1 qt. oysters (optional)
- 2 lb. hot sausage, sliced
- 1 lb. ham, sliced
- 3 large onions, chopped
- 2 cloves garlic, minced
- 1 green pepper, chopped
- 1 1/2 c. chopped celery
- 1 lb. okra, sliced
- 2 bay leaves
- 1 tsp. basil
- 1 tsp. thyme
- 1 tsp. oregano
- cayenne pepper to taste
- 1 (16 oz.) jar prepared spaghetti sauce
- 2 qt. water
- 1 qt. chicken stock
- 2 celery stalks with leaves
- 1/4 c. all-purpose flour
- 6 Tbsp. margarine
- You will need 1 large heavy pot (approximately 20 quarts).
