Backporch Cabbage Slaw
- Dressing
- 1/2 cup sour cream
- 3 ounces cream cheese, softened
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons milk
- 1 tablespoon fresh lemon juice
- Salad
- 4 cups red cabbage, shredded
- 10 ounces frozen peas, thawed, drained
- 1 cup carrot, shredded
- 1 cup sliced cucumber
- 2 tablespoons fresh parsley, chopped
- in a small bowl stir together all dressing ingredients.
- in large bowl layer 2 cups cabbage, 1 cup peas, 1/2 cup carrots, and 1/2 cup cucumber.
- pour 1/2 cup dressing over salad.
- repeat layer.
- pour remaining dressing over salad.
- sprinkle with 2 tablespoons parsley.
