Gingered Shrimp
- 1 Tbsp. vegetable oil
- 1 Tbsp. grated fresh ginger
- 1 lb. medium shrimp, peeled
- 1 (20 oz.) can pineapple chunks, drained (save juice)
- 4 oz. fresh or 1 (6 oz.) pkg. frozen snow peas
- 1 sweet red or green pepper, sliced
- 1 Tbsp. cornstarch
- 1/2 tsp. rice wine or cider vinegar
- 1/4 tsp. sugar
- salt to taste
- In wok over medium-high heat, heat oil 1 minute.
- Add ginger; cook 1 minute.
- Add shrimp and cook 4 minutes.
- With slotted spoon, remove shrimp; set aside.
- Add pineapple, snow peas and pepper to wok.
- Cook 1 minute; in measuring cup, stir pineapple juice, cornstarch, vinegar, sugar and salt until smooth.
- Add to wok.
- Bring to a boil.
- Add shrimp.
- Cook 3 minutes until sauce thickens.
