Gingered Shrimp

  1. In wok over medium-high heat, heat oil 1 minute.
  2. Add ginger; cook 1 minute.
  3. Add shrimp and cook 4 minutes.
  4. With slotted spoon, remove shrimp; set aside.
  5. Add pineapple, snow peas and pepper to wok.
  6. Cook 1 minute; in measuring cup, stir pineapple juice, cornstarch, vinegar, sugar and salt until smooth.
  7. Add to wok.
  8. Bring to a boil.
  9. Add shrimp.
  10. Cook 3 minutes until sauce thickens.
