Chicken Taco Rice
- 1 lb. boned chicken breasts, cut into strips
- 2 Tbsp. oil
- 1 c. (13 3/4 oz.) chicken broth
- 1 c. tomato sauce
- 1 pkg. taco seasoning mix
- 1 c. corn, drained
- 1 medium red or green pepper, cut in strips
- 1 1/2 c. Minute rice
- 1/2 c. shredded cheese
- tortilla chips
- sour cream (optional)
- Cook and stir chicken in hot oil until lightly browned.
- Add broth, tomato sauce and seasoning mix.
- Bring to a boil.
- Stir in rice.
- Cover and simmer 5 minutes.
- Add corn and red pepper.
- Bring to a full boil.
- Stir in rice.
- Cover.
- Remove from heat.
- Let stand 5 minutes.
- Fluff with a fork.
- Serve with cheese sprinkled over it, tortilla chips and sour cream, if desired.
