Impressive Jello Salad
- 1 pkg. cherry jello (small)
- 1 pkg. strawberry jello (small)
- 2 c. boiling hot water
- 1/2 bag miniature marshmallows
- 3 bananas or 4
- 1 large can crushed pineapple (save juice)
- 1 c. nuts
- 3/4 c. sugar
- juice (from pineapple)
- 2 eggs, beaten
- 2 Tbsp. flour
- 1 (8 to 10 oz.) cream cheese
- 1 (8 oz.) Cool Whip
- coconut
- Mix well cherry jello, strawberry jello and hot water.
- Mix marshmallows, bananas, pineapple and nuts all up.
- Refrigerate for 1/2 hour.
- Cook the following on top of stove until thick but do not boil:
- sugar, juice from pineapple, eggs, flour and cream cheese.
- Stir constantly.
- Spread over refrigerated jello evenly. Refrigerate.
- Let cool.
- On top spread Cool Whip.
- Top with coconut.
