Cashew Chicken
- 1 lb. chicken breast fillets, cubed
- 1 egg white
- 1 Tbsp. cornstarch
- 1/2 tsp. ginger
- 1 tsp. salt
- 1 Tbsp. soy sauce
- 3 Tbsp. cooking oil
- 4 green onions
- 1 pkg. frozen snow pea pods (10 oz.)
- 1 can sliced water chestnuts
- 1/2 c. water, with 1 Tbsp. cornstarch
- 1 c. cashews
- Mix egg white,tornstarch,
- soy sauce, ginger and salt and pour over chicken pieces.
- Let stand for 15 minutes. Brown chicken pieces in hot oil in wok or large frying pan.
- Remove. Stir-fry green onions, pea
- pods
- and
- water
- chestnuts.
- Add chicken pieces and thicken with 1/2 cup water and 1 tablespoon cornstarch. Add cashews and serve immediately over hot steamed rice.
