Microwave Chicken Parmesan

  1. Mix tomato sauce, Italian seasoning and garlic salt in a 2-cup measure.
  2. Cover with wax paper.
  3. Microwave on High (100%) 2 minutes; stir.
  4. Reduce power to Medium (50%).
  5. Microwave 5 minutes, stirring once; set aside.
  6. Mix corn flake crumbs, 1/4 cup Parmesan cheese and the parsley flakes.
  7. Dip chicken breasts in eggs, then in crumb mixture.
  8. Place in rectangular baking dish, 8 x 12-inch or 10-inch square casserole.
  9. Cover with waxed paper.
  10. Microwave at Medium-High (70%) until chicken is tender, 9 to 14 minutes, rearranging after half the cooking time (do not turn over).
  11. Pour sauce over chicken.
  12. Sprinkle Mozzarella cheese over chicken breasts.
  13. Sprinkle with Parmesan cheese.
  14. Microwave at Medium-high (70%) until Mozzarella melts and sauce is hot, 2 to 5 1/2 minutes. Makes 4 to 6 servings.
