Molded Shrimp Loaf
- 2 pkg. unflavored gelatin
- 1/2 c. cold water
- 1 (10 3/4 oz.) can tomato soup
- 8 oz. cream cheese, softened and mashed
- 1 c. finely chopped celery
- 1 c. finely chopped green and red pepper
- 12 oz. shrimp, chopped and chilled in ice water
- 1 c. mayonnaise
- 1 Tbsp. grated onion
- 1 Tbsp. horseradish
- 1 Tbsp. capers, drained
- 1/2 tsp. hot pepper sauce
- salt to taste
- 1/2 head shredded lettuce (for garnish)
- lemon/lime slices (for decoration)
- Dissolve gelatin in cold water.
- Bring tomato soup to a boil in saucepan.
- Add gelatin and allow to cool.
- When cool, add cream cheese.
- Stir in all other ingredients.
- Pour into an oiled 9 x 5-inch loaf pan; cover and chill for 2 to 4 hours or until set. To serve, unmold on large platter.
- Garnish with lettuce and lemon and lime slices.
