Oatmeal Peanut Butter Chocolate Chip Bars

  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9x13-inch baking dish with nonstick cooking spray; set aside.
  2. In a medium bowl, mix together the flour, oats, baking soda and salt.
  3. In a separate bowl, beat together the butter, peanut butter, brown sugar and white sugar.
  4. Add the eggs, one at a time. Mix in the vanilla extract.
  5. Slowly add the dry ingredients and mix until no white streaks remain.
  6. Fold in 1 1/2 cups semisweet chocolate chips.
  7. Press mixture into prepared pan. Scatter remaining 1/2 cup semisweet chocolate chips on top. Gently press into dough.
  8. Bake at 350 degrees Fahrenheit for 22-25 minutes, or until lightly browned on top and around the edges.
  9. Remove pan from oven to a wire rack.
  10. Cool completely and cut into 24 bars.
