Greek Shrimp
- 5 Tbsp. olive oil
- 1 tsp. minced garlic
- 2 c. peeled, cubed Roma tomatoes
- 1/2 c. white wine
- 1 tsp. dried oregano
- 1 lb. large fresh shrimp, peeled and deveined
- 1/2 lb. dry ziti, rigatoni or spiral pasta
- 1/2 lb. crumbled Feta cheese
- salt and pepper to taste
- Preheat oven to 400u0b0.
- Heat 2 tablespoons oil in skillet and saute garlic.
- Cook briefly and add tomatoes.
- Cook 1 minute and add wine, salt, pepper and oregano.
- Cook over moderate heat for 10 minutes.
- Set aside.
- Heat remaining 3 tablespoons oil and saute shrimp about 1 minute.
- Spoon shrimp and pan juices into baking dish.
- Cover with Feta cheese and spoon tomato sauce on top.
- Bake 10 minutes.
- Cook pasta, drain and serve with shrimp mixture spooned on top.
