Peanut Butter Balls
- 2 3/4 sticks butter
- 3/4 c. peanut butter
- 3 c. powdered sugar
- 1/2 tsp. vanilla
- 3/4 c. chopped nuts
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- 1/2 block paraffin
- cooking spray
- 2 Tbsp. graham crumbs
- 2 containers (8 oz.) low-fat vanilla yogurt
- 1 egg
- 1/2 c. sugar
- 1/4 c. Agra cornstarch
- 1 (8 oz.) pkg. light cream cheese, cut into cubes
- Pineapple Topping (recipe follows)
- Spray 9-inch pie pan with cooking spray. Sprinkle with crumbs. In blender or food processor, blend yogurt, egg, sugar and cornstarch. Gradually add cream cheese; blend until smooth. Pour into larger microwavable bowl. Microwave on High (100%), whisking 3 times, 8 to 10 minutes or until consistency of chilled pudding. Remove; stir until smooth. Pour into pie plate. Cover and chill 1 hour. Top with Pineapple Topping.
