Pork Tenderloin Red Cabbage Wraps

  1. Dice the pork tenderloin, peaches and chop cilantro.
  2. Heat up olive oil and fry the pork tenderloin dices over medium heat for 10/15 minutes.
  3. Then add the diced peaches and cooked/cooled brown rice.
  4. Stir-fry for about 5 minutes over medium heat. Add the chopped cilantro the last 1 or 2 minutes and continue stir-frying.
  5. Chop the cucumber and tomatoes into small cubes and put in a bowl together with the corn.
  6. Drizzle some olive oil and chopped cilantro; mix well.
  7. Peel off larger cabbage leafs and set aside.
  8. Stuff the cabbage leafs as preferred, roll up and pinch with a toothpick.
