German Potatoes
- 3 medium size white potatoes
- 3 strips bacon
- 1/4 onion or 3 to 4 green onions
- 1/2 c. white vinegar
- 1/3 c. water
- 1 1/2 Tbsp. sugar
- 1/2 tsp. pepper
- 1/2 tsp. salt
- 1 Tbsp. flour
- Peel potatoes, slice or cut into 1/2-inch pieces and boil in salted water just until tender.
- (Be careful not to overcook or the potatoes will become mush.)
- Meanwhile cut bacon into small pieces. Cut onion into small pieces or green onions into thin slices.
- Mix together vinegar, water, sugar, pepper and salt.
- Fry bacon in skillet until crisp, then scoop bacon out of skillet into vinegar mixture, leaving drippings in skillet.
- Saute onion in drippings. Add flour to onion in skillet and stir until smooth and thickened. Drain potatoes (when tender) and pour into skillet.
- Add bacon/vinegar mixture and stir gently to mix evenly.
