Blueberry Nectarine Muffins
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1/2 cup wheat germ
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 3/4 cup milk
- 1/4 cup olive oil
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 3/4 cup nectarine, chopped
- For the topping
- 1 tablespoon wheat germ
- 1 tablespoon brown sugar
- 2 tablespoons rolled oats
- Preheat oven to 375.
- Spray 12 cup muffin tin with cooking spray.
- Mix together dry ingredients in large bowl.
- Mix together wet ingredients in a separate bowl.
- Add wet ingredients to dry and mix until just combined.
- Stir in fruit.
- Pour into prepared muffin tins and bake for 18-20 or until toothpick comes out clean.
