Lamb Shanks
- 4 lamb shanks
- 1 clove garlic
- salt and pepper
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 1/4 tsp. rosemary
- 1/4 tsp. thyme
- 1/2 tsp. curry powder
- 1 bay leaf, crumbled
- 4 large onions, thinly sliced
- 2 Tbsp. soy sauce
- 1/4 c. dry white wine
- 1/4 c. water
- Rub lamb shanks with garlic.
- Place in roasting pan and sprinkle with salt and pepper.
- Mix together the herbs, curry powder and bay leaf; sprinkle over shanks.
- Place onion slices on top and pour soy sauce over meat.
- Roast, uncovered, in a 400u0b0 oven for 15 minutes, then reduce heat to 300u0b0.
- Cover and roast for 2 hours.
- Pour off fat, then add wine and water. Roast 1 hour more.
- If you need more liquid, add wine and water. Delicious!
