Cranberry Orange Glazed Cornish Hens
- 2 cornish game hens
- 2 Tbsp. butter melted
- 1/4 c. whole cranberry sauce
- 2 Tbsp. orange marmalade
- 1 Tbsp. lemon juice
- 1 tsp. minced onion
- 1 tsp. corn starch
- 1/2 c. mandarin orange sections, drained
- Rinse hens, pat dry.
- Coat inside and outside of hens with melted butter, sprinkle with salt and pepper.
- Place hens, breast side up, on a rack in shallow roasting pan.
- Insert meat thermometer.
- Cover loosely with foil.
- Roast in 375 degree oven for 30 minutes.
- Uncover and roast one hour or until thermometer reads 185 degrees.
- Meanwhile, for sauce, in a one quart saucepan, combine cranberry sauce, orange marmalade, lemon juice, minced onion and corn starch.
- Cook and stir until thick and bubbly. Cook and stir 2 more minutes.
- Remove from heat, stir in orange sections.
- Brush sauce on hens several times during last 20 minutes of roasting.
