Boil-Bake Country Ham

  1. Three

  3. before
  4. serving, in large roaster or stock pot, soak ham overnight in enough cold water to cover.
  5. In the morning remove ham, place in sink and scrub with a brush under running water
  6. until
  7. it
  8. has
  9. been
  10. cleaned
  11. of any cleaning debris. Wash
  12. roaster,
  13. place
  14. ham
  15. in
  16. it
  17. and cover it with water.
  18. Add vinegar and 1 cup of brown sugar to ham water and bring
  19. to
  20. boil, immediately reducing heat to low.
  21. Simmer 20 minutes
  22. per
  23. pound for older ham, 15 to 18 minutes for quick-aged
  24. ham,
  25. or
  26. until the small bone in hock can be pulled out with the fingers.
  27. Let cool in cooking water overnight.
