Bisquick Skillet Meat Loaf
- 2 tsp. instant beef bouillon or 2 cubes
- 3/4 c. boiling water
- 1 lb. lean ground beef
- 3/4 c. Bisquick
- 1/2 c. crushed saltines
- 1/2 c. chopped onion
- 1/2 c. chopped green bell peppers
- 2 Tbsp. catsup
- 1/8 tsp. pepper
- 2 or 3 medium potatoes, cut into wedges (6 out of 1 potato)
- 4 slices American cheese, halved
- 1 (4 oz.) can sliced mushrooms
- Dissolve bouillon in boiling water; save 1/2 cup for later. Mix all ingredients together in a large bowl, except potatoes, 1/2 cup bouillon, cheese and mushrooms.
- Pat the meat loaf into a 9-inch skillet to within 1-inch of the edge.
- Pour remaining bouillon around the edge.
- Place potatoes on meat loaf in a spoke fashion.
- Cover with a tight fitting lid or foil and a lid.
- Cook on low heat on top of the stove (not in the oven) 40 to 50 minutes or until potatoes are tender.
- Then arrange the cheese and mushrooms on top of the potatoes; continue cooking until cheese is melted.
