Bisquick Skillet Meat Loaf

  1. Dissolve bouillon in boiling water; save 1/2 cup for later. Mix all ingredients together in a large bowl, except potatoes, 1/2 cup bouillon, cheese and mushrooms.
  2. Pat the meat loaf into a 9-inch skillet to within 1-inch of the edge.
  3. Pour remaining bouillon around the edge.
  4. Place potatoes on meat loaf in a spoke fashion.
  5. Cover with a tight fitting lid or foil and a lid.
  6. Cook on low heat on top of the stove (not in the oven) 40 to 50 minutes or until potatoes are tender.
  7. Then arrange the cheese and mushrooms on top of the potatoes; continue cooking until cheese is melted.
