Chicken And Okra Gumbo
- 1 large onion, chopped
- 2 c. sliced okra (inch length), fresh or frozen
- 4 Tbsp. bacon drippings
- 1 (2 1/2 lb.) chicken, cut up or you may use chicken breast of the same amount, cut up
- salt and pepper
- 1/2 tsp. garlic powder
- 2 Tbsp. chopped green pepper
- 2 cans Swanson chicken broth plus water to make 2 qt. liquid
- gumbo file (optional)
- Saute onion and okra in the drippings about 30 minutes, stirring often.
- Season chicken
- with
- salt
- and pepper, brown chicken in additional oil or drippings in heavy skillet on low flame.
- Pour off excess oil.
- Add
- the okra, onion mixture and gradually stir in water.
- Season
- with gumbo filet if desired. Cook over low heat until
- chicken
- is tender (about 45 minutes or more).
- Remove bones
- from chicken, if desired.
- Serve over hot cooked rice.
- Yields 8 to 10 servings.
