Chicken And Okra Gumbo

  1. Saute onion and okra in the drippings about 30 minutes, stirring often.
  2. Season chicken
  3. with
  4. salt
  5. and pepper, brown chicken in additional oil or drippings in heavy skillet on low flame.
  6. Pour off excess oil.
  7. Add
  8. the okra, onion mixture and gradually stir in water.
  9. Season
  10. with gumbo filet if desired. Cook over low heat until
  11. chicken
  12. is tender (about 45 minutes or more).
  13. Remove bones
  14. from chicken, if desired.
  15. Serve over hot cooked rice.
  16. Yields 8 to 10 servings.
