Applesauce-Raisin Snack Cake
- 2 c. raisins
- 2 c. water
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. ground cinnamon
- 1 c. unsweetened applesauce
- 2 eggs
- 1/2 c. vegetable oil
- 3 Tbsp. liquid sugar substitute
- cooking spray
- Place raisins and water in a medium saucepan; bring to a boil.
- Cover; remove from heat and let stand 5 minutes.
- Drain raisins, discarding water.
- Combine flour and next 3 ingredients, stirring well.
- Set aside.
- Combine applesauce and next 3 ingredients in a large bowl.
- Add flour mixture to applesauce mixture, stirring until blended; fold in raisins.
- Pour batter into a 13 x 9-inch pan coated with cooking spray.
- Bake at 350u0b0 for 35 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan on wire rack 10 minutes; remove from pan and let cool completely on wire rack.
- Yield:
- 12 servings.
