Applesauce-Raisin Snack Cake

  1. Place raisins and water in a medium saucepan; bring to a boil.
  2. Cover; remove from heat and let stand 5 minutes.
  3. Drain raisins, discarding water.
  4. Combine flour and next 3 ingredients, stirring well.
  5. Set aside.
  6. Combine applesauce and next 3 ingredients in a large bowl.
  7. Add flour mixture to applesauce mixture, stirring until blended; fold in raisins.
  8. Pour batter into a 13 x 9-inch pan coated with cooking spray.
  9. Bake at 350u0b0 for 35 minutes or until wooden pick inserted in center comes out clean.
  10. Cool in pan on wire rack 10 minutes; remove from pan and let cool completely on wire rack.
  11. Yield:
  12. 12 servings.
