Two Potato Gratin
- 2 large russet potatoes, peeled, thinly sliced (about 1 1/4 lb.)
- 1 Tbsp. minced rosemary, or 2 Tbsp. dried
- 1 1/2 C. whipping cream
- 2 orange-fleshed sweet potatoes, peeled, thinly sliced (about 1 lb)
- 1 C. grated Swiss cheese
- 1/3 C. grated Parmesan cheese
- Arrange half of russet potatoes in 8x8 inch glass baking dish. Sprinkle 1/4 of rosemary, salt and pepper.
- Top with half of sweet potatoes.
- Repeat rosemary, salt and pepper.
- Repeat layering and season each layer.
- Pour cream over.
- Cover tightly with plastic wrap and microwave on High until potatoes are tender, about 18 minutes.
- Sprinkle both cheeses over potatoes and microwave on high, uncovered until cheese melts and bubbles, about 3 minutes. Cool 10 minutes.
- May also be baked in oven at 350 degrees for about 1 hour, or until potatoes are tender.
