Ruth'S Chris Sweet Potato Casserole (Tripled)
- Sweet Potato Mixture
- 9 cups mashed sweet potatoes or 80 ounces canned yams
- 3 cups sugar
- 1 1/2 teaspoons salt
- 3 teaspoons vanilla
- 6 eggs, well beaten
- 3/4 cup melted butter (1 1/2 Sticks)
- Topping
- 3 cups brown sugar
- 1 cup flour
- 1 cup butter, melted (2 Sticks)
- 3 cups nuts, pecans finely chopped
- Preheat oven to 350 degrees. Coat a 13 x 9 inch casserole dish with nonstick spray.
- Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl in the order listed. Beat thoroughly with a hand mixer to increase the fluffiness of the sweet potato mixture.
- Pour mixture into buttered 13x9 inch baking dish.
- Bake for 30 minutes at 350 degrees. (At this point, dish can be covered and refrigerated, after cooled a bit so it doesn't sweat too much.).
- Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes.
- Allow to set at least 30 minutes before serving.
