Banana Quick Bread

  1. Sift
  2. together flour, baking powder and salt.
  3. Add nuts and blend.
  4. Beat
  5. shortening
  6. until
  7. creamy
  8. (300 strokes or 2 minutes at medium
  9. speed).
  10. Gradually add sugar, beating until fluffy. After each addition,
  11. add
  12. eggs and beat until thick. Add flour mixture and bananas alternately, blending thoroughly after
  13. each addition.
  14. Fold
  15. in
  16. fruits
  17. and
  18. raisins.
  19. Grease bottom only of 4 1/2 x
  20. 8
  21. 1/2 x 3-inch loaf pan.
  22. Turn batter into pan.
  23. Bake in moderate oven at 350u0b0 for 60 to 70 minutes. Cool 10 minutes. Remove
  24. from
  25. pan.
  26. Cool
  27. thoroughly
  28. before slicing.
  29. Freezes well.
