Crisfield Crab Skimmers
- 1 lb. crab meat
- 2 Tbsp. minced green pepper
- 3/4 c. finely chopped celery
- 2 Tbsp. minced onions
- 1 c. mayonnaise
- 1 c. small cubes Velveeta or grated Monterey Jack cheese
- few drops Worcestershire sauce
- few drops hot sauce
- 1/2 tsp. lemon pepper seasoning
- 1 tsp. Old Bay seafood seasoning
- 7 English muffins, split in half
- Mix crab meat, green pepper, celery, onions, mayonnaise, Worcestershire sauce, hot sauce, lemon pepper seasoning and Old Bay seasoning.
- Put muffins on cookie sheet.
- Place under broiler and toast slightly.
- Remove.
- Mound crab mixture on muffins.
- Top with cheese of choice.
- Broil 4 inches from heat until lightly browned and bubbly.
- Serve at once.
