Chicken Casserole
- 1 c. butter or Butter Buds
- 1 c. chopped celery
- 1 c. chopped bell pepper
- 1 c. chopped yellow onions
- 1 c. chopped green onions
- 2 cloves garlic, chopped
- 1 can cream of mushroom soup
- 1 can Cheddar cheese soup
- 5 to 6 chicken breasts or whole chicken
- 3 c. cooked rice
- salt and pepper to taste
- Boil your chicken, break into bite size pieces and set it aside.
- Melt butter in a large pot (4 or 5-quart).
- Add celery, bell pepper, yellow onions and garlic; cook until tender.
- Add green onions and cook for 5 minutes more.
- Add both cans of soup and chicken pieces; cook for about 10 minutes.
- Add rice, salt and pepper and pour into casserole dish.
- Bake at 350u0b0 for about 30 minutes, or until top is golden.
