Vegetable Soup
- 1 onion, diced
- 2 garlic cloves, minced
- 2 cups baby carrots, cut into bite sized pieces, peeled
- 1 head celery heart, cut into bite sized pieces
- 1 (8 ounce) package button mushrooms, sliced
- 2 zucchini, cut into bite sized pieces
- 1 (16 ounce) can crushed tomatoes
- 4 cups chicken broth
- 1 teapsoon dried basil
- 1 teaspoon dried oregano
- salt and pepper
- 2 cups frozen broccoli florets
- 2 cups frozen spinach
- parmesan cheese
- 1, Heat a large stockpot over high heat. Spray with cooking spray.
- 2. Add the oinion and saute for 2 minutes. Add the garlidc and saute for minutes more.
- 3. Add everything else excpet for the broccoli, spinach, and parm cheese.
- 4. Bring to a boil and then let simmer for 15 minutes.
- 5. Add the broccoli and spinach and let cook another 5 minutes.
- 6 Serve and top with cheese.
