Avocado-Cashew Wreath
- 3 medium avocados
- 2 (8 oz.) pkg. cream cheese, room temperature
- 2 c. finely chopped cashews
- 1 c. finely shredded sharp Cheddar cheese (4 oz.)
- 2 Tbsp. lemon juice
- 2 cloves garlic, crushed
- 4 oz. can green chilies, diced
- 1/4 c. finely chopped onion
- 2 tsp. Worcestershire sauce
- 1 tsp. salt
- pepper to taste
- green food coloring if desired
- chopped parsley for garnish
- pimento for garnish
- In food processor with metal blade, mash avocados.
- Remove and measure 2 cups.
- Process avocado and remaining ingredients in 2 batches.
- Mix well until blended.
- Stir in a few drops of food coloring, if desired.
- This may be refrigerated overnight in a bowl with avocado pit, covered with plastic wrap directly on spread to prevent it from darkening.
- It also can be frozen!

- Before serving, stir well.
- Spoon onto platter in the shape of a wreath.
- Sprinkle with chopped parsley and strips of pimento shaped like a bow.
- Serve with crackers or bread rounds.
- Makes 4 cups.
- Serves 12 to 16.
