Cheesy Chili Hot Dish
- 2 lb. ground beef
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper (optional)
- 1 (12 oz.) can whole kernel corn, drained
- 1 (15 oz.) can tomato sauce
- 1 pkg. chili seasoning mix
- 1 to 1 1/2 lb. Velveeta cheese
- 4 c. tortilla chips
- 1/2 c. chopped tomato
- chopped green or black olives (optional)
- 1 1/2 to 2 c. Cheddar cheese
- Brown meat, green pepper and onion.
- Drain.
- Stir in corn, tomato sauce and chili seasoning.
- Add Velveeta cheese, cut into cubes.
- Stir till cheese melts.
- Spread 1/2 of meat mixture into bottom of a 1 1/2 to 2 quart square casserole dish.
- Top with 1/2 of chips.
- Add rest of meat mixture.
- Bake at 350u0b0 for 25 minutes. Top with rest of chips, tomatoes, olives and Cheddar cheese.
- Bake until cheese melts.
