Pineapple Upside-Down Cake
- 1/2 c. margarine
- 1 c. packed brown sugar
- 1 (20 oz.) can sliced pineapple, drained (save juice)
- walnut halves
- maraschino cherries
- 1 pkg. yellow cake mix
- Preheat oven to 350u0b0.
- Heat margarine in 9 x 13 x 2-inch baking dish or pan in oven until melted.
- Sprinkle brown sugar over margarine.
- Arrange pineapple on top of mixture.
- Decorate with walnut halves and maraschino cherries.
- Prepare cake mix as directed on package, except substitute pineapple juice for water. Pour cake batter over mixture already in pan.
- Bake until top springs back when touched lightly in center, 45 to 55 minutes. Immediately invert pan on heatproof serving plate.
- Let pan remain a few minutes.
- Serve warm and if desired with whipped cream.
