Lite Pesto Fettuccine

  1. Cook fettuccine noodles as per instructions.
  2. Strain and toss in olive oil.
  3. Keep at low heat.
  4. In blender, combine basil with stock, garlic and nuts and blend until pureed.
  5. Pour this over hot noodles and toss.
  6. Serve with grated Parmesan cheese.
  7. For a heavier meal, add half and half to pesto and noodles.
  8. Toss, then add grated Asiago cheese and toss well.
  9. Keep on low heat.
  10. You may also add tuna or crab.
  11. Toss and serve.
  12. Serves 4.
