Spicy Cranberry Muffins
- 2 c. sifted flour
- 3/4 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 3/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 c. chopped walnuts
- 2 well beaten eggs
- 2/3 c. milk
- 1/3 c. cooking oil
- 1 1/2 c. fresh cranberries
- 1 c. whole wheat cereal flakes
- 2 Tbsp. sugar
- 1/4 tsp. ground cinnamon
- Sift together the first 6 ingredients.
- Stir in the nuts.
- Set aside.
- Combine the eggs, milk and cooking oil; add all at once to dry ingredients, stirring just until moistened.
- Fold in cranberries (chopped) and cereal flakes.
- Fill greased muffin pans 2/3 full.
- Combine 2 tablespoons sugar and 1/4 teaspoon ground cinnamon; sprinkle atop.
- Bake in a 400u0b0 oven for 20 to 25 minutes.
- Makes 18.
