Slow Cooker Chicken Tikka Masala - Weight Watchers
- 1 (28 ounce) can crushed tomatoes
- 1 small onion, minced
- 1 tablespoon minced garlic, 4-6 cloves
- 1 tablespoon minced fresh gingerroot
- 2 tablespoons garam masala
- 1 tablespoon dark brown sugar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 2 lbs boneless skinless chicken thighs (about 8 pieces)
- 1 tablespoon kosher salt
- 1/2 cup low fat plain Greek yogurt
- 1/4 cup chopped fresh cilantro (optional)
- Combine all ingredients, except yogurt and cilantro, in slow cooker. Cook on high for 3 to 4 hours or low for 6 to 8 hours. Stir in yogurt and cilantro.
- Yields about 1 cup chicken with sauce per serving.
