Beef And Broccoli Stir-Fry

  1. Partially freeze beef.
  2. Slice thinly across grain into bite-size strips.
  3. Cook broccoli and carrots, covered in boiling water, 2 minutes; drain.
  4. Mix cornstarch, sugar and salt; stir into soy sauce and sherry; set aside.
  5. Preheat wok over high heat; add 1 tablespoon oil.
  6. Stir-fry broccoli, carrots and onion in hot oil over high heat, about 3 minutes or until crisp and tender. Add remaining oil; stir-fry beef 2 to 3 minutes or until browned. Stir soy sauce mixture into beef; cook and stir until thick and bubbly.
  7. Stir in broccoli, carrots and onion.
  8. Cover and cook another minute.
