Andes Mint Chip Cookies

  1. Preheat oven to 350u0b0F.
  2. Raise oven rack one level above middle.
  3. Blend butter, sugars, baking soda, baking powder, vanilla and eggs until mixed.
  4. Stir in Andes baking chips.
  5. Add flour.
  6. Chill dough overnight.
  7. Measure out approximately 1 ounce of dough.
  8. Form into ball, flatten slightly.
  9. Place dough onto parchment lined baking sheets.
  10. Bake for 8-10 minutes.
  11. Allow to cool on pans for two minutes before removing.
  12. Finish cooling on wire racks.
