Chocolate Banana Bread
- 1/3 c. vegetable shortening
- 2 eggs
- 1/4 c. milk
- 3/4 tsp. vinegar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 c. raisins
- 1/2 c. finely chopped nuts
- 2/3 c. sugar
- 1 c. mashed ripe bananas
- 1 c. plus 2 Tbsp. flour
- 1/2 tsp. salt
- 1 c. (6 oz.) semi-sweet real chocolate chips
- Combine shortening in a large bowl with sugar and eggs.
- Beat until creamy.
- Combine milk and vinegar in small bowl.
- Stir in mashed bananas.
- Combine flour, baking powder, salt and soda in small bowl.
- Stir flour mixture into creamed mixture alternately with bananas.
- Fold in chocolate chips, raisins and nuts.
- Turn into 4 well-greased and floured 6 x 3 1/2 x 2-inch loaf pans or 1 (9 x 5 x 3-inch) pan.
- Spread to fill pans and smooth top.
- Bake in 375u0b0 oven for 25 to 30 minutes or until tester inserted in center comes out clean.
- Remove from pans to rack immediately.
- Cool thoroughly before cutting or before wrapping for freezing or for gifts.
- Makes 4 small or 1 large loaf.
