Zucchini Chocolate Cake
- 1/2 c. soft butter
- 1 2/3 c. sugar
- 1 tsp. vanilla
- 2 1/2 c. flour
- 1 tsp. baking soda
- 1/2 c. buttermilk
- 6 oz. chocolate chips
- 1/2 c. vegetable oil
- 2 eggs
- 1/2 tsp. chocolate flavoring
- 1/4 c. cocoa
- 1/2 tsp. salt
- 2 c. shredded zucchini
- 1/2 c. chopped nuts
- Preheat oven to 325u0b0.
- Grease and lightly flour 9 x 13-inch pan.
- Beat together butter, oil and sugar in large bowl until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Blend in flavorings.
- Combine dry ingredients. Add to creamed mixture alternately with buttermilk, beating well after each addition.
- Stir in zucchini.
